Vegetable Kurma

 Ingredients :

Beans - 4-5 
Carrot - 1 big
Peas - Handful
Potato - 1 Big
Tomato - 1 Medium
Onion - 1 big
Ginger + Garlic paste - 1.5 tbs
Kari leaves
Coconut -  1 small cup
Fennel seeds -1/2 tbs
Clove 2 
Star anise - little
Cinnamon - Little
Bay  leaves - 1/2 leave 
Chilli powder 3/4 tbs
Dhaniya powder - 3/4 tbs
Turmeric powder - 1/4 tbs
Green chilli -1
Salt - to taste
Oil  to fry
 
Preparation :-

1. Cut carrot, beans into small pieces, Potato & Tomato into medium size. 
2. Cut onion into small pieces then smash it in  mixie. 
3. Heat oil in a cooker add Fennel seeds, Clove,Star anise ,Cinnamon, Bay  leaves, any other masala items if you want to add can add. Fry this, then add ginger garlic paste, fry it. Then add smashed onions , karileaves then fry till it change into little brown. 
4. Add all the vegetables, green chilli and fry for sometime.
5. Pour 1/2 to 3/4 glass of water, add chilli powder, garam masala, dhaniya powder, turmeric powder and salt. Mix it well. 
6. Close the cooker, put weight and leave it for 2 whistles.
7. Remove and smash 3-4 pieces of potato.
8. Grind coconut into fine paste now, add coriander leaves. Boil it for 3-4 mins.
 
Kurma is to serve with Parata, Chapati and Rice. 

Tips:
Home made Pakoda's can be added in this Kurma. 
Parrupu vada, boiled egg, omlet are the best combination side dishes with rice and kurma.
Only with Cauliflower and peas same kurma can be made. 
Little cauliflower can be added in this kurma.
