Chicken Fried Rice

Ingredients :

For Rice :
1.Basmati Rice - 1 cup
2. Onions - 1
3. Capsicum, Beans, Carrot and Cabbage - 1 cup
4. Ajinomoto - 1/4 tsp    => (Amma dint give this, you have to get it)
5. Cumin Seeds - 1 tsp
6. Oil - 2 tbsp
7. Pepper powder - 1 tbsp
8. Salt to taste

For Chicken :
1.  Boneless Chicken - 250 gms
2. Ginger Garlic paste - 1/4 tsp
3. Pepper powder - 1/4 tsp
4. Garam Masala - 1/4 tsp
5.  Red Chili powder - 1/4 tsp
6. Oil - 1 tsp
7. Salt to taste
8. Egg - 1

Preparation: 

To cook  Rice:

1. Clean/wash  and soak the rice for 20 mins. 
2. Cook the rice in a non stick pan with 1& 1/4 cups of water. (Use the same cup which you measured the rice) 
3. Once its boiled, remove and spread it on a plate so that each grain will be separated.
4. Cut all vegetables finely. 
5. Heat a non stick kadai.,  Add 2 tbsp of Oil, add cumin seeds. When it splutters, add chopped onions. (Keep little onion aside to mix later.)  Fry well, then add all the chopped vegetables. Sauté well with the flame high. Keep sauteing till the vegetables are crisp and well cooked. This dish requires the vegetables to be crisp and not over cooked.
6. Now add Ajinomoto, and Salt. Sauté well. Slowly add the cooked rice and mix well. Add the pepper powder and adjust the salt. Sprinkle the balance onion over the rice.

To cook Chicken :

1. Pressure cook the chicken, add 1/4 tsp salt to taste, turmeric powder and Ginger Garlic paste, sprinkle water as required. (Dont add water)
2. Remove the bones and keep the boneless chicken pieces aside. 
3. Heat a pan with oil, add red chili powder. Sauté in the chicken pieces, sprinkle pepper powder and Garam masala, break the egg, fry it well until it gets dry, then add the Rice which already prepared.


Now ready to serve.
